The perfect baked potatoes actually do not start out in the oven, but rather in the microwave, a thing I discovered by accident, kind of, while in a hurry to get things done.
Pre-cooking potatoes in the microwave is quick and heats them inside out. In combination with heat from the outside over the boiling point of water, your potatoes will assume a firm and chewy texture with incredibly savory flavor with a crispy outside, especially if you leave the potatoes as they are, unpeeled.
Just wash them and cook them in your microwave for about 4 minutes for smaller potatoes to 8 minutes for larger ones at 900 watts, uncovered. Once done, thinly coat them with a bit of oil and put them into a greased frying pan or onto a greased baking tray and bake for at least half an hour up to one and a half hour at 356 F / 180°C (320 F / 160° C in a fan oven), turning them around once or twice during that time.
